Our May Roundtable was hosted by Jason Birchard and Justin Birchard, Owners, and Tommy Kelly, Director of CPG, Wholesale & Marketing with Veselka at their Williamsburg location. Jason and Justin shared Veselka’s identity evolution and how they expanded the brand. They spoke about how they found the sweet spot of legacy, location, and authenticity while having no outside investment, keeping the soul inside the restaurant, breaking ground in QSR, a new Brooklyn location, and a commissary. Tommy shared insights about balancing automation, authenticity, and adaptation, along with early challenges around distraction and building a separate business mindset for CPG.
