Our September 2025 Roundtable was hosted by Maneesh Goyal and Alvina Patel Buxani, Co-Owners, and Executive Chef Chetan Shetty. They shared the inspiration for Passerine and the various elements that make for a unique and memorable experience, with original spices and freedom of expression in the food offering. Discussions focused on creating a concept for NY’ers by NY’ers, identifying the “sensitivity pricing scale” for your customers, and learnings and priorities from opening a second concept in the same space. Kash Singh of Aerial Design and Build provided insights on current restaurant construction trends and strategic refurbishment of existing locations. Members and guests broke into small groups to mastermind what parts of their business they need to demystify for those they serve and how they go about it.
