Our October 2025 Roundtable was hosted by Matt Poli, Co-Owner of iggy’s. Matt spoke about the service charge model they’ve employed at iggy’s, its structure, implementation, and the resulting effect on the restaurant’s culture, team morale, and guest experience. Members and guests then took a moment to speak about implementing a service charge model, what has worked and what hasn’t, and what is working best about their current tipping system. Conversations also included the experience as a guest dining at restaurants with service charge models.
