Our September 2025 Roundtable gathered at the beautiful Avli on The Park, with its soaring windows overlooking the greenery of Lakeshore East, for a timely conversation on the role of AI in restaurants. We heard from Avli Group CEO Louie Alexakis, who shared his background and candid thoughts on where AI is currently in use across his restaurants—and where he believes it has far greater potential. Right now, he noted, there are too many platforms generating too much data, without offering the intelligent, integrated insights operators actually need.

Carissa shared a handout outlining key dos and don’ts for implementing AI in restaurants, followed by small-group breakout discussions on how we’re each using AI in our own businesses. Groups highlighted opportunities like streamlining scheduling, inventory tracking, and marketing content, while cautioning against over-automating guest-facing hospitality touchpoints or relying on AI for creative brand voice without human oversight.
